Grapes, picked healthy and whole without any trace of rot, are carefully set down in the press, following rules identical to the "Mthode Champenoise." The first fermentation, known as "Vin de Base," takes place in tanks while the second fermentation, called "Prise de Mousse," occurs in the bottle itself in cool cellars.
